Cut the scallops in mini dices . Place them in a bowl. Add the diced avocado, lemon juice, olive oil, salt, pepper, and chopped herbs. Refrigerate for 1h.
Fill the scallop tartar into the croustades at the last minute, decorate with herbs and serve immediately.

Trick
To make the filo cups, line each mould with three 6 cm squares of filo, buttered with a kitchen brush, and place them on top of each other, staggered at the top. Bake them for 8 minutes at 190 degrees Celsius. Allow to cool completely.
