Peel the potatoes, carrots and turnips, cut them into bite-sized pieces and cook them in water with the stock cubes until they are tender.
Drain the vegetables, keeping the cooking stock (about 400 g).
Peel the shallot and chop finely. Melt the butter in a saucepan. Add the stock, cream, cornflour mixed with a little water, salt, pepper and nutmeg and bring to the boil, stirring continuously.
Season, add the chopped parsley and stir.
Toss the sauce with the vegetables and serve.
