In a large pot, sauté the diced onion and garlic in butter over medium heat until softened. Add the peeled and cubed butternut squash and potato, and cook for a few minutes. Pour in the vegetable broth and bring to a boil. Let it simmer over low heat for about 20 minutes, until the vegetables are tender. Purée the soup with an immersion blender or in a regular blender until smooth. Add the cream, salt, pepper, and nutmeg.
To make the hazelnut mousse, whip the cream to soft peaks, then gently fold in the hazelnut puree, honey, and a pinch of salt. Serve the soup in bowls or plates and add a spoonful of hazelnut mousse to each serving. Garnish with toasted hazelnuts and fresh herbs.
