Watermelon-Kiwi-Lemon Popsicles (traditional method and Thermomix)

Ingredients:

Preparation:

TRADITIONAL METHOD:

1\. Watermelon layer:

Cut the watermelon into chunks and remove any seeds.

Blend until smooth with a hand blender.

Stir in the chocolate chips.

Pour into the popsicle moulds, filling them about 2/3 full.

Insert sticks and freeze for 1 hour.


2\. Lemon yogurt layer:

Mix yogurt, lemon juice and zest, and sugar in a bowl.

Carefully pour onto the frozen watermelon layer.

Freeze again for 30 minutes.


3\. Kiwi layer:

Peel and blend the kiwi with the yogurt until smooth.

Pour over the yogurt layer.

Freeze for at least 4 hours, or until fully set.

THERMOMIX METHOD:

1. Watermelon layer:

Place 400 g watermelon in the mixing bowl → 20 sec / speed 8

Add 20 g chocolate chips → 5 sec / reverse / speed 3

Fill moulds about 2/3 full, insert sticks → freeze 1 hour


2. Lemon yogurt layer:

Without cleaning the bowl, add:
60 g yogurt, juice and zest of ¼ lemon, 1 tbsp sugar
→ 10 sec / speed 4

Pour onto frozen watermelon layer → freeze 30 min


3. Kiwi layer:

Add 1 peeled kiwi + 30 g yogurt to the bowl → 10 sec / speed 5

Fill up the moulds and freeze for at least 4 hours

💡 Tip:

To get those clean, defined layers, make sure each one is frozen before adding the next. Pour slowly and gently for best results.
