Gratin du Soleil – Flavours of Provence & the Amalfi Coast
A vegetarian, sun-kissed gratin full of flavour, where the South of France meets Southern Italy.

Instructions:

1\. Preheat the oven to 170°C (fan-assisted).


2\. In a large bowl, mix the cherry tomatoes, bell pepper, olives, mozzarella (cut into pieces), and oregano.


3\. Season with herb salt and black pepper to taste.


4\. Transfer everything to an ovenproof dish.


5\. Bake for about 20 minutes, just until the cheese melts and the vegetables are tender. The cheese should not brown.
