Oven-baked and crispy – no frying needed

Ingredients:
Preparation:
Preheat oven to 230 °C fan. Line two baking trays with parchment and lightly oil.
Grate the parmesan and coarsely blend the stale bread. Mix with herbs.
Set up 3 shallow bowls:
- flour + salt + pepper
- beaten eggs
- parmesan breadcrumbs
Coat chicken pieces (flour → egg → crumbs), place on tray.
Drizzle with olive oil and flip in the oil to coat evenly.
Bake 10 min, flip, then bake 8–10 min more. Serve hot.
