Preparation:
Roughly chop vegetables.
Place all ingredients in a large pot.
Cover with cold water. Slowly bring to a boil, then simmer gently for 2 hours. Skim foam as needed.
Strain through a fine sieve or cloth.
Let cool and store in the fridge or freeze in portions.
